Olive Mill Pomace Extract Loaded Ethylcellulose Microparticles as a Delivery System to Improve Olive Oils Oxidative Stability

The protective effect of olive mill pomace (OMP) loaded ethylcellulose microparticles as an alternative to synthetic antioxidants against the oxidation oils was assessed. OMP extract obtained by optimized two-step solid-liquid extraction; encapsulation performed double emulsion solvent evaporation technique considering a theoretical loading content in phenolic compounds 5% (w/w). changes peroxide values, p-anisidine total free fatty acids content, antioxidant activity, and were synchronized under storage at 62 °C. results oxidative stability compared with plain oils, enriched antioxidants, fortified extract. efficiency 96.0 ± 0.3%. fortification retarded appearance peroxides, reduced secondary products, slowed down hydrolysis processes. efficiently designed sustain release control status oil samples, retarding formation rather than antioxidants. this study bring new perspectives regarding potential use encapsulated extracts rich improve stability.
